  2 1/2 lbs Ricotta Cheese
1 3/4 cup Heavy Cream
3/4 cup Powder Sugar
5 Whole Eggs
2 Egg Yolks
Zest of 1 Orange & 1 Lemon
1/8 tsp. of vanilla
*any type of pie crust will do
* In a large bowl, add ricotta cheese and powder sugar.
* Mix at low speed.
* Then add eggs, egg yolks, heavy cream, and vanilla.
* Continue mixing on low speed until texture is smooth.
* Add zest and place filling in a pre made pie shell.
* Preheat oven at 320 degrees.
* Place in oven and bake for approximately 1 hour and twenty minutes, or until filling tighten up.
